Due to the delicate roasting process, 24 hours prior notice is required for this item. Marinated Long Island Duckling roasted and served in three courses: Skin is carved out as an appetizer and served with traditional pancakes, scallion brushes and hoisin sauce. Meat is julienned and stir-fried with carrots and celery as the entrée and bones are simmered with bean threads, tofu and preserved Chinese cabbage to make the soup.
